Hurray for the Crock Pot!

"I found out the Chicken Ceasar Salad I got at Chili's had 900 calories, 71 grams of fat and 1740 mg. of sodium. So muich for trying to make a healthy choice. And the Crispy Orange Chicken Bowl I got at Applebee's last time has 1,709 calories, 69 grams of fat, 209 grams of carbohydrate, and 1781 mg. of sodium. What an eye-opener."  (Cindy)

After reading this, I was happy that I'd used my crock pot that morning!  I follow few recipes when I use the crock pot.  Sometimes I start with the meat -- in this case, a couple of pieces of frozen chicken breast.  I cut some garden tomatoes into large hunks; then went to the refrigerator to see what else would work--celery, carrots, some chopped onion--ANYthing healthy works. Light on the meat; heavy on the vegetables!

Often I add about a cup of liquid - yesterday I used chicken bouillon.  A look at the clock told me to set my pot for 6 hours (that would be medium).  Just before lunch, I prepared a small portion of whole wheat pasta per the directions on the box.  I added the cooked pasta to the crock pot and cooked for another 15-20 minutes.

This will be my practice as we go into fall and winter.  The aroma and enjoyment of the delicious, nourishing meal bring me much pleasure.

  1. I can smell the delicious aroma all the way down here in the South! Crock pots are great, aren't they? (Six pounds down, 9 to go.)

  2. Okay this post settles it, I am going to leave my crock pot on top of my counter so I remember to use it often. I am going to try your chicken breast and vegetable/pasta this weekend. I have everything in the house already so I don't have to go shopping, love that. Rebecca I so enjoy your tips on how to eat healthy and you have given me so many ideas on how to prepare a meal early so that when the time comes I can enjoy my meal without having to rush around making something with so much clean up. Cooking for one has always been a challenge for me and you my dear friend have shown me a way to turn a challenge into joy and fun. Thank you!......:-) Hugs

  3. yum, this sounds really good! I also use a pressure cooker now and then if I forget to get the crock pot going. Does anyone else use a pressure cooker anymore?? Rebecca I'm so impressed with your healthy living venture and I'm wondering if you can point me to just HOW you accomplished this weight loss...did you follow a specific diet or what? I'm sure you've blogged about it so just point me to where I can start reading! In the meantime, I'm going to get the crock pot out myself!

  4. I also enjoy crock pot cooking even if I'm home all day. It's a great way to have dinner planned ahead of time.
